Cheesy Vegetable and Leftover Pizza Bake

Ingredients
- 1 onion (approx. 100g), peeled
- 20g olive oil
- 150g carrots, peeled and cut into 1-2 cm pieces
- 200g cauliflower florets
- 200g broccoli florets
- 200g courgettes, trimmed and sliced
- 300g potatoes, peeled and diced (1-2 cm cubes)
- 500g water (for steaming)
- 500g milk
- 20g plain flour
- 2 large eggs
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp dried oregano
- 0.25 tsp garlic powder
- Pinch of nutmeg
- 150g cheese (e.g., cheddar, mozzarella), grated
- 200-300g cold leftover pizza, cut into small pieces
- Fresh parsley or basil, chopped (for garnish, optional)
Instructions
- Preheat your oven to 180°C (350°F).
- If using block cheese, add 150g cheese to the clean Thermomix bowl. Grate 10 sec / Speed 7. Transfer to a separate bowl and set aside.
- Add 1 onion (approx. 100g) to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20g olive oil to the bowl. Sauté 5 min / 120°C / Speed 1. Transfer the sautéed onion to a large ovenproof dish and set aside.
- Add 500g water to the Thermomix bowl. Place the prepared carrots, potatoes, cauliflower, and broccoli into the Varoma dish. Place the sliced courgettes into the Varoma tray. Secure the Varoma onto the mixing bowl.
- Steam the vegetables 25 min / Varoma / Speed 2. Check for tenderness; if needed, steam for an additional 5 minutes. Carefully remove the Varoma and set the steamed vegetables aside with the sautéed onion. Discard the water from the mixing bowl.
- Add 500g milk, 20g plain flour, 2 eggs, 1 tsp salt, 0.5 tsp black pepper, 0.5 tsp dried oregano, 0.25 tsp garlic powder, and a pinch of nutmeg to the clean Thermomix bowl. Cook 8 min / 90°C / Speed 2.
- Add 75g of the grated cheese to the bowl. Cook 2 min / 90°C / Speed 2 Reverse to melt and combine. Pause and scrape down the sides and bottom of the bowl to ensure even mixing.
- Add the chopped leftover pizza pieces to the ovenproof dish with the sautéed onion and steamed vegetables. Pour the cheese sauce from the Thermomix bowl over the mixture. Gently stir to combine all ingredients evenly.
- Sprinkle the remaining 75g grated cheese over the top of the bake.
- Bake for 25-30 minutes in the preheated oven, or until the top is golden brown and the bake is bubbling.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley or basil, if desired.
