Cheesy Beef and Vegetable Gratin

Ingredients
- 200 g broccoli, cut into florets
- 200 g cauliflower, cut into florets
- 200 g courgettes, sliced
- 250 g cold cooked beef, diced
- 150 g cheddar cheese (or similar), grated, divided
- 600 g water (for steaming)
- 40 g unsalted butter
- 40 g plain flour
- 500 g milk
- 1 tsp salt
- 0.5 tsp black pepper
- Pinch of nutmeg
Instructions
- Cut 200 g broccoli and 200 g cauliflower into small florets. Slice 200 g courgettes into 1 cm thick rounds. Dice 250 g cold cooked beef into small cubes. Grate 150 g cheese and set aside 50 g for topping.
- Add 600 g water to the mixing bowl. Place broccoli and cauliflower in the Varoma dish. Place courgettes on the Varoma tray. Secure Varoma and steam 20 min / Varoma / Speed 2.
- Carefully remove the Varoma and set aside. Discard the water from the mixing bowl.
- Add 40 g butter to the mixing bowl. Melt 2 min / 100°C / Speed 1.
- Add 40 g plain flour to the bowl. Cook 2 min / 100°C / Speed 1 to make a roux.
- Add 500 g milk, 1 tsp salt, 0.5 tsp black pepper, and a pinch of nutmeg to the bowl. Cook 7 min / 90°C / Speed 3.
- Add 100 g grated cheese to the bowl. Cook 2 min / 90°C / Speed 2 until melted and smooth.
- Pause and scrape down the sides of the bowl. Cook for a final 1 min / 90°C / Speed 2 to ensure smoothness and prevent sticking.
- Preheat your oven to 180°C (350°F). Lightly grease a medium ovenproof baking dish.
- Arrange the steamed broccoli, cauliflower, courgettes, and diced beef evenly in the prepared baking dish. Pour the cheese sauce over the vegetables and beef.
- Sprinkle the reserved 50 g grated cheese over the top. Bake for 15-20 minutes, or until bubbling and golden brown.
- Serve hot.
