Cheesy Arepas

Ingredients
- 300 g pre-cooked white cornmeal (Harina P.A.N.)
- 500 g warm water
- 5 g salt
- 200 g mozzarella cheese, grated (or queso fresco)
- 20 g vegetable oil, for pan-frying
Instructions
- Grate the mozzarella cheese using the Thermomix: Place 200 g mozzarella cheese into the clean, dry mixing bowl. Grate 10 sec / Speed 5. Transfer to a separate bowl and set aside. Clean and dry the mixing bowl.
- Add 500 g warm water and 5 g salt to the mixing bowl. Heat 2 min / 37°C / Speed 1 to dissolve the salt.
- Add 300 g pre-cooked white cornmeal to the mixing bowl. Mix 30 sec / Speed 4. If the dough is too dry, add 10-20 g more water and mix for another 10 seconds. The dough should be soft and pliable.
- Transfer the dough to a bowl, cover with a damp cloth, and let it rest for 5-10 minutes.
- Divide the dough into 8 equal portions. Take one portion and flatten it into a disc about 1 cm thick. Place a spoonful of grated cheese in the center, then carefully fold the edges of the dough over the cheese to seal it, forming a ball. Gently flatten the ball back into a disc shape, ensuring the cheese is fully enclosed. Repeat with the remaining dough and cheese.
- Pour 1000 g water into the mixing bowl. Place the Varoma dish into position and line it with baking paper (make sure to leave some gaps for steam circulation). Carefully arrange the formed arepas in the Varoma dish without overcrowding.
- Steam the arepas 20-25 min / Varoma / Speed 2. The arepas should be firm to the touch.
- Heat 20 g vegetable oil in a large non-stick frying pan over medium-high heat on the stovetop. Once hot, carefully transfer the steamed arepas to the pan.
- Cook the arepas for 3-5 minutes on each side, or until golden brown and crispy. The cheese inside should be melted and gooey.
- Serve the cheesy arepas immediately, either plain or with your favorite toppings like avocado, salsa, or a fried egg.
