Caramelized Banana Chocolate Ganache

Ingredients
- 100 g granulated sugar
- 30 g water
- 15 g unsalted butter
- 300 g ripe but firm bananas, peeled and sliced (about 2-3 bananas)
- 150 g dark chocolate (at least 70% cocoa solids), broken into pieces or callets
- 150 g heavy cream (35% fat)
- Optional: cocoa powder or chocolate shavings, for garnish
Instructions
- Add granulated sugar and water to the clean Thermomix bowl. Cook 8-10 min / 120°C / Speed 1, without the measuring cup, or until a golden caramel forms. Watch carefully to prevent burning.
- Add the unsalted butter and sliced bananas to the bowl. Cook 3-4 min / 90°C / Speed 1 / Reverse, or until the bananas are lightly coated and slightly softened.
- Carefully transfer the caramelized bananas to a separate bowl and set aside.
- Immediately rinse the Thermomix bowl with warm water and a drop of dish soap, then run 10 sec / Speed 6 to clean. This is crucial before making the ganache.
- Add dark chocolate pieces to the clean, dry bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl with the spatula. (Skip this step if using chocolate chips or callets).
- Add heavy cream to the bowl. Heat 3 min / 90°C / Speed 2.
- Scrape down the sides of the bowl. Mix 1 min / Speed 3, or until the chocolate is fully melted and the ganache is smooth and glossy.
- Layer the warm caramelized bananas and chocolate ganache in individual serving dishes or glasses.
- Garnish with a sprinkle of cocoa powder or chocolate shavings, if desired. Serve warm or chilled.
