Broccoli Salad

  1. Add 1/2 red onion, peeled and quartered, to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of the bowl with the spatula.
  2. Add 1/2 cup golden or black raisins, 1/4 cup apple cider vinegar, 4 tsp granulated sugar, and 2 tbsp water to the bowl. Mix 5 sec / Speed 2.
  3. Transfer the dressing mixture to a separate medium bowl. Set aside to pickle for 10 minutes. Clean and dry the mixing bowl.
  4. While the dressing pickles, prepare the broccoli: Peel the woody exterior from the broccoli stalks. Cut broccoli (stalks and florets) into large chunks (approx. 3-4 cm).
  5. Add half of the prepared broccoli chunks to the clean mixing bowl. Chop 3-4 sec / Speed 4, or until desired 1.5 cm pieces are achieved. Transfer to a large serving bowl. Repeat with the remaining broccoli.
  6. Core 1 apple and cut into quarters. Add to the mixing bowl. Chop 2-3 sec / Speed 4, or until 1.5 cm cubes are achieved. Add to the serving bowl with the chopped broccoli.
  7. Finely slice 2 scallions (white and green parts) manually. Add to the serving bowl.
  8. To the pickling mixture (in the separate bowl), add 3 tbsp extra-virgin olive oil and 1 tbsp sesame oil. Stir well with a spoon until combined. Taste and adjust salt if needed (the dressing should have a total of about 3/4 tsp Kosher salt).
  9. Pour the finished dressing over the broccoli, apple, and scallions in the serving bowl. Add 1/2 tsp Kosher salt and black pepper to taste. Toss thoroughly with two large spoons until all ingredients are well coated.
  10. Just before serving, add 1/2 cup toasted sliced almonds (or pepitas/sunflower seeds) and 1 cup halved red or green grapes (if using). Gently toss. Serve at room temperature.
