  1. Add onion (approx. 150 g) to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  2. Add 45 g unsalted butter to the bowl. Sauté 5 min / 120°C / Speed 1. Ensure the measuring cup is removed and the simmering basket is placed on the lid for evaporation.
  3. While the onion is sautéing, remove the outer leaves from the red cabbage, quarter it, remove the core, and thinly slice or shred it (approximately 1 kg). For best results, shred manually to ensure even pieces.
  4. Add the shredded red cabbage, 250 g water, 50 g lemon juice, 5 g salt, 3 g black pepper, and 5 g sugar to the Thermomix bowl. Cook 25 min / 95°C / Speed 2 (Reverse). Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
  5. After 15 minutes of cooking, pause the machine. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the thickness and add a splash more water if it appears too dry. Continue cooking.
  6. While the cabbage is cooking, peel, core, and dice the 2 firm, tart apples into 1x1 cm cubes.
  7. Add the diced apples to the Thermomix bowl. Continue to cook 10 min / 95°C / Speed 2 (Reverse).
  8. For the last 1-2 minutes, cook 1 min / 90°C / Speed 1 (Reverse) to settle and evenly distribute the ingredients, preventing any sticking to the bottom.
  9. Serve the braised red cabbage warm as a side dish or a light vegetarian main.
