  1. Ensure okra is completely dry before cutting to prevent sliminess. Trim the ends and cut the okra into 2-3 cm pieces. Set aside.
  2. Add 200 g of the onions to the mixing bowl. Chop 5 sec / Speed 5. Transfer to a separate bowl and set aside.
  3. Add ginger and garlic to the mixing bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl with the spatula.
  4. Add 40 g oil or ghee, 1 tsp cumin seeds, and the finely chopped onions (from step 2) to the mixing bowl. Sauté 8 min / 120°C / Speed 1 (Reverse).
  5. Add 200 g roughly chopped tomatoes to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  6. Add 1 tsp turmeric powder, 2 tsp coriander powder, ½ tsp red chili powder, and 1 tsp salt to the bowl. Cook 5 min / 100°C / Speed 1 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow for evaporation.
  7. Add the prepared 600 g okra to the mixing bowl. Cook 15 min / 95°C / Speed 1 (Reverse), with the simmering basket on the lid.
  8. Pause the machine, scrape down the sides and bottom of the bowl with the spatula to prevent sticking and ensure even cooking. Check the consistency and adjust liquid if needed (though okra releases moisture).
  9. Add the remaining 200 g roughly chopped onions and 1-2 slit green chilies (if using) to the mixing bowl. Cook 5 min / 90°C / Speed 1 (Reverse), with the simmering basket on the lid.
  10. Add 1 tsp garam masala to the bowl. Cook 1 min / 90°C / Speed 1 (Reverse) to combine the flavors and prevent any sticking.
  11. Transfer the Bhindi Do Pyaza to a serving dish. Garnish with fresh chopped coriander leaves and serve hot with roti, naan, or rice.
