Beef Burritos

Ingredients
- 100 g uncooked white rice (medium-grain)
- 600 g water (for rice)
- 15 g olive oil
- 450 g lean ground beef
- 1 large clove garlic
- 4 g salt (approx. ¾ tsp)
- 2 g smoked paprika (approx. 1 tsp)
- 2 g cumin (approx. 1 tsp)
- 1 g onion powder (approx. ½ tsp)
- 1 g dried oregano (approx. ½ tsp)
- 0.5 g black pepper (approx. ¼ tsp)
- 0.5 g chili powder (optional, approx. ¼ tsp)
- 120 g canned black beans (drained)
- 170 g mild tomato salsa
- 23 g BBQ sauce (approx. 1.5 tbsp)
- 175 g grated cheese (such as Cheddar)
- 6 large soft tortilla wraps
Instructions
- Add 600 g water to the mixing bowl. Insert the simmering basket and add 100 g uncooked white rice. Cook 20 min / 100°C / Speed 4. Carefully remove the simmering basket with the spatula and set the cooked rice aside. Empty and dry the mixing bowl.
- Add 1 large clove garlic to the mixing bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add 15 g olive oil and 450 g lean ground beef to the mixing bowl. Cook 8 min / 120°C / Speed 1 / Reverse. Break up any large clumps of beef with the spatula through the lid opening during cooking if needed. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for some evaporation.
- Add 4 g salt, 2 g smoked paprika, 2 g cumin, 1 g onion powder, 1 g dried oregano, 0.5 g black pepper, and 0.5 g chili powder (if using) to the mixing bowl. Cook 2 min / 120°C / Speed 1 / Reverse to toast the spices.
- Add 120 g drained black beans, 170 g mild tomato salsa, and 23 g BBQ sauce to the mixing bowl. Cook 10 min / 98°C / Speed 2 / Reverse. Pause halfway through (after 5 minutes) to scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Replace the simmering basket on the lid.
- Add 175 g grated cheese to the mixing bowl. Cook 2 min / 90°C / Speed 2 / Reverse to melt the cheese and combine, ensuring the mixture settles and prevents sticking.
- To assemble the burritos: Lay out a tortilla wrap. Add a portion of the cooked rice, then a generous spoonful of the beef filling. Fold in the sides, then roll up tightly from the bottom.
- Serve immediately or prepare for cooking/freezing as desired.
