Beef and Rice Noodle Stir-fry

  1. In a medium bowl, combine the thinly sliced beef with 2 tsp soy sauce, 2 tsp dark soy sauce, 2 tsp oyster sauce, and 1 tsp baking soda (if using). Mix well and set aside to marinate for at least 15 minutes while you prepare other ingredients.
  2. Add 800 g water to the Thermomix bowl. Insert the simmering basket. If using fresh rice noodles, add them to the simmering basket. Cook 5-7 min / 100°C / Speed 2, or until just tender. If using dry rice noodles, cook according to package instructions, then drain and rinse with cold water. Carefully remove the simmering basket with the spatula and set the noodles aside. Discard the water from the bowl and clean the bowl.
  3. Add 160 g onion, peeled and quartered, and the white parts of the 6 green onion stalks to the clean bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
  4. Add 30 g oil for cooking to the bowl. Sauté 5 min / 120°C / Speed 1. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for some evaporation.
  5. Add the marinated beef to the bowl. Cook 5-7 min / 120°C / Reverse / Speed 1. Pause halfway through to scrape down the sides of the bowl and ensure beef is separating.
  6. Add the cooked rice noodles, 100 g mung bean sprouts, the green parts of the 6 green onion stalks, and 1/4 tsp black pepper to the bowl. Mix 2 min / 90°C / Reverse / Speed 1-2, ensuring all ingredients are well combined and heated through.
  7. Taste and adjust seasoning if necessary. Serve immediately.
