Basque Lemon Cheesecake

Ingredients
- 500 g cream cheese, at room temperature
- 150 g caster sugar
- Zest of 1 lemon, finely grated
- 3 large eggs (size 7)
- 250 ml cream
- 1 tsp vanilla extract
- ¼ tsp sea salt
- 3 tbsp plain flour
Instructions
- Preheat your oven to 200°C. Grease a 22 cm springform cake tin and line fully with baking paper, pleating it to fit around the sides. Ensure the paper comes at least 2 cm above the rim of the tin.
- Add 500 g cream cheese, 150 g caster sugar, and the finely grated zest of 1 lemon to the Thermomix bowl. Mix 30 sec / Speed 4 until completely smooth, scraping down the sides if needed.
- Add the 3 large eggs, one at a time, through the lid opening while mixing 10 sec / Speed 3 after each addition. Scrape down the sides of the bowl.
- Add 250 ml cream, 1 tsp vanilla extract, and ¼ tsp sea salt to the bowl. Mix 15 sec / Speed 3 until just combined.
- Add 3 tbsp plain flour to the bowl. Mix 20 sec / Speed 3 until the batter is smooth and no lumps of flour remain. Scrape down the sides of the bowl to ensure everything is incorporated.
- Pour the batter into the prepared springform tin. Bake on the middle shelf of the preheated oven for 30-40 minutes, or until the top is dark brown and puffed up but still has a wobble in the centre.
- Remove the cheesecake from the oven and leave it to cool completely in the tin. The cheesecake will fall quite dramatically as it cools.
- Once completely cool, gently peel off the baking paper. Slice into wedges and serve, optionally with poached or roasted seasonal fruit and whipped cream.
