Bao Buns with Orange Shrimp and Broccoli

  1. Prepare broccoli: Cut 250 g broccoli into small florets. Peel the stem and cut into thin sticks. In a medium bowl, combine 5 g white wine vinegar, 15 g sugar, and a pinch of salt. Mix well until sugar dissolves. Add the prepared broccoli and toss to coat. Set aside.
  2. Prepare orange: Zest the orange and set aside for garnish. Squeeze the juice from the orange (approx. 80-100 ml).
  3. Prepare sauce: In a separate bowl, combine the orange juice, 35 g sweet Asian sauce, 15 g honey, and 10 g cornstarch. Whisk until smooth.
  4. Steam bao buns: Add 500 g water to the mixing bowl. Place 6 bao buns into the Varoma tray. Place Varoma into position. Steam 7 min / Varoma / Speed 2. Carefully remove Varoma and set steamed buns aside, covered to keep warm. Empty and dry the mixing bowl.
  5. Chop aromatics: Add 1 garlic clove, 1 red chili (deseeded), and 1 small red onion (halved) to the dry mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of the bowl.
  6. Sauté aromatics: Add 30 g sunflower oil to the bowl. Sauté 5 min / 120°C / Speed 1.
  7. Sauté vegetables: Add the red bell pepper strips to the mixing bowl. Cook 5 min / 120°C / Reverse / Speed 1.
  8. Cook shrimp: Add 160 g raw shrimp (pat dry) to the mixing bowl. Cook 3 min / 90°C / Reverse / Speed 1. Transfer shrimp to a separate bowl and set aside.
  9. Thicken sauce: Add the prepared sauce mixture to the mixing bowl. Cook 2 min / 90°C / Reverse / Speed 2, or until sauce thickens. Add the cooked shrimp back into the bowl. Stir 30 sec / 90°C / Reverse / Speed 1.
  10. Combine and serve: Add the steamed, seasoned broccoli to the mixing bowl with the shrimp and sauce. Stir 30 sec / 90°C / Reverse / Speed 1. Carefully open the steamed bao buns. Fill each bun with a portion of the shrimp and vegetable mixture. Garnish with the reserved orange zest and a few extra slices of red chili if desired. Serve immediately.
