  1. Preheat your oven to 180°C (350°F). Line two baking sheets with parchment paper and set aside.
  2. Place 150 g peeled ripe bananas into the Thermomix bowl. Mash 5 sec / Speed 5. Scrape down the sides of the bowl and mash again for 3 sec / Speed 5 if needed, until smooth. Transfer the mashed banana to a separate bowl and set aside. Clean and dry the Thermomix bowl.
  3. Insert the butterfly whisk. Add 115 g softened unsalted butter, 100 g brown sugar, and 50 g granulated sugar to the clean Thermomix bowl. Cream 2 min / Speed 3. Scrape down the sides of the bowl.
  4. Add 1 large egg and 1 tsp vanilla extract to the bowl. Mix 30 sec / Speed 3.
  5. Add the reserved mashed banana to the bowl. Mix 15 sec / Speed 3. Remove the butterfly whisk.
  6. In a separate medium bowl, whisk together 250 g plain flour, 1 tsp baking soda, ½ tsp salt, and ½ tsp ground cinnamon.
  7. Add the dry ingredients mixture to the Thermomix bowl. Mix 20 sec / Speed 3 (Reverse). Scrape down the sides of the bowl. Mix for another 10 sec / Speed 3 (Reverse) if needed, just until the ingredients are combined. Be careful not to overmix.
  8. Drop rounded tablespoons of batter onto the prepared baking sheets, leaving about 5 cm (2 inches) between each. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the cream cheese filling. Clean and dry the Thermomix bowl and insert the butterfly whisk.
  10. Add 115 g softened unsalted butter and 225 g softened cream cheese to the bowl. Cream 1 min / Speed 3. Scrape down the sides of the bowl.
  11. Add 300 g powdered sugar and 1 tsp vanilla extract to the bowl. Mix 30 sec / Speed 3. Scrape down the sides of the bowl. Mix for another 15 sec / Speed 3, until the filling is light and fluffy.
  12. Once the cookies are completely cool, spread or pipe a generous amount of cream cheese filling onto the flat side of one cookie. Top with another cookie, flat side down, to create a whoopie pie. Repeat with the remaining cookies and filling.
  13. Serve immediately or store in an airtight container in the refrigerator.
