Baked Feta, Spinach, Endive, and Pea Frittata

Ingredients
- 1 small onion, peeled and quartered
- 2 cloves garlic, peeled
- 20 g olive oil
- 150 g endive, trimmed and sliced
- 100 g baby spinach
- 150 g frozen peas
- 6 large eggs
- 50 ml milk (or cream)
- 100 g feta cheese, crumbled
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat oven to 180°C (350°F). Lightly grease a 20-22 cm (8-9 inch) oven-safe dish.
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil. Sauté 3 min / 120°C / Speed 1.
- Add sliced endive and baby spinach to the bowl. Cook 3 min / 100°C / Reverse / Speed 1, or until spinach is wilted and endive slightly softened.
- Add frozen peas to the bowl. Cook 2 min / 90°C / Reverse / Speed 1.
- Transfer the cooked vegetables to the prepared oven-safe dish, spreading them evenly.
- Without cleaning the bowl, add eggs, milk, crumbled feta, salt, and pepper. Mix 10 sec / Speed 4.
- Pour the egg mixture over the vegetables in the oven-safe dish. Gently stir with a spatula to distribute the vegetables evenly.
- Bake for 20-25 minutes, or until the frittata is set in the center and lightly golden on top.
- Let the frittata rest for a few minutes before slicing and serving.
