Authentic Pad Thai with Shrimp and Chicken

Ingredients
- 200 g dried flat rice noodles (medium)
- 200 g raw shrimp, peeled and deveined
- 200 g boneless, skinless chicken breast, thinly sliced
- 2 large eggs
- 150 g fresh bean sprouts, plus extra for serving
- 50 g fresh chives or spring onions, cut into 3 cm pieces
- 50 g roasted peanuts, unsalted
- 20 g vegetable oil
- 3 cloves garlic
- 2 shallots, peeled
- 60 g tamarind paste (seedless)
- 60 g palm sugar, finely chopped
- 60 g fish sauce
- 50 g water
- 1 lime, cut into wedges for serving
Instructions
- Place dried rice noodles in a large bowl. Pour enough hot (not boiling) water over them to cover completely. Let soak for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
- Add roasted peanuts to the clean and dry mixing bowl. Chop 3 sec / Speed 5. Transfer to a small bowl and set aside.
- Add garlic and shallots to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 20 g vegetable oil to the bowl. Sauté 3 min / 120°C / Speed 1 (Reverse).
- Add sliced chicken breast to the bowl. Cook 4 min / 100°C / Speed 1 (Reverse). Remove chicken from the bowl and set aside with the peanuts.
- Add shrimp to the bowl. Cook 3 min / 100°C / Speed 1 (Reverse). Remove shrimp from the bowl and set aside with the chicken.
- Without cleaning the bowl, add the 2 eggs. Scramble 2 min / 90°C / Speed 2. Transfer scrambled eggs to the bowl with the chicken and shrimp.
- Add tamarind paste, finely chopped palm sugar, fish sauce, and 50 g water to the mixing bowl. Cook 5 min / 98°C / Speed 2 (Reverse). Remove measuring cup and place simmering basket on lid to prevent splatter and allow slight evaporation.
- Insert the butterfly whisk. Add the drained rice noodles, cooked chicken, shrimp, scrambled eggs, 150 g bean sprouts, and chives to the bowl with the sauce. Gently mix 2 min / 90°C / Speed 2 (Reverse).
- Pause, scrape down the sides and bottom of the bowl with the spatula. Continue mixing 1 min / 90°C / Speed 2 (Reverse) to ensure everything is well combined and heated through.
- Serve immediately, garnished with chopped peanuts, fresh lime wedges, and extra fresh bean sprouts.
