Authentic Pad Thai with Chicken and Shrimp

Ingredients
- 200 g dried flat rice noodles (approx. 5 mm wide)
- 20 g shallots, peeled
- 2 cloves garlic, peeled
- 30 g neutral oil (e.g., rice bran or vegetable oil)
- 200 g chicken breast, cut into thin strips
- 200 g raw shrimp, peeled and deveined
- 2 large eggs
- 100 g firm tofu, pressed and cut into small cubes (optional)
- 150 g fresh bean sprouts
- 50 g fresh chives or spring onions, cut into 3 cm lengths
- 50 g roasted peanuts, roughly chopped, plus extra for garnish
- 1 lime, cut into wedges, for serving
- 1/2 tsp dried chilli flakes (optional, for serving)
- FOR THE PAD THAI SAUCE:
- 60 g palm sugar, finely chopped
- 60 g tamarind paste (seedless)
- 60 g fish sauce
- 30 g water
Instructions
- Place dried rice noodles in a large bowl and cover with warm water. Let them soak for 20-30 minutes, or until pliable but still firm. Drain and set aside.
- Prepare the Pad Thai Sauce: Add palm sugar, tamarind paste, fish sauce, and water to the Thermomix bowl. Cook 3 min / 90°C / Speed 2. Pour the sauce into a small bowl and set aside. Clean and dry the Thermomix bowl.
- Add shallots and garlic to the clean, dry bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 15 g oil to the bowl. Sauté 3 min / 120°C / Speed 1. Scrape down the sides of the bowl.
- Add chicken strips to the bowl. Cook 5 min / 120°C / Reverse / Speed 1. Transfer the cooked chicken to a separate bowl and set aside.
- Add shrimp to the bowl. Cook 3 min / 120°C / Reverse / Speed 1. Transfer the cooked shrimp to the bowl with the chicken and set aside.
- Add the remaining 15 g oil to the bowl. Add the eggs and scramble 2 min / 90°C / Reverse / Speed 2. Break up the scrambled egg with the spatula.
- Add the drained rice noodles, the reserved Pad Thai sauce, and 50 g water to the bowl. Insert the butterfly whisk. Cook 5-7 min / 90°C / Reverse / Speed 1, or until noodles are tender but still have a slight bite. Pause halfway through to scrape down the sides of the bowl and check for sticking; add a splash more water if needed.
- Add the cooked chicken, shrimp, tofu (if using), bean sprouts, chives/spring onions, and chopped peanuts to the bowl. Gently combine 1 min / 90°C / Reverse / Speed 1.5.
- Serve immediately, garnished with extra chopped peanuts, fresh lime wedges, and chilli flakes if desired.
