Authentic Pad Thai with Chicken and Shrimp

  1. Place dried rice noodles in a large bowl and cover with warm water. Let them soak for 20-30 minutes, or until pliable but still firm. Drain and set aside.
  2. Prepare the Pad Thai Sauce: Add palm sugar, tamarind paste, fish sauce, and water to the Thermomix bowl. Cook 3 min / 90°C / Speed 2. Pour the sauce into a small bowl and set aside. Clean and dry the Thermomix bowl.
  3. Add shallots and garlic to the clean, dry bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
  4. Add 15 g oil to the bowl. Sauté 3 min / 120°C / Speed 1. Scrape down the sides of the bowl.
  5. Add chicken strips to the bowl. Cook 5 min / 120°C / Reverse / Speed 1. Transfer the cooked chicken to a separate bowl and set aside.
  6. Add shrimp to the bowl. Cook 3 min / 120°C / Reverse / Speed 1. Transfer the cooked shrimp to the bowl with the chicken and set aside.
  7. Add the remaining 15 g oil to the bowl. Add the eggs and scramble 2 min / 90°C / Reverse / Speed 2. Break up the scrambled egg with the spatula.
  8. Add the drained rice noodles, the reserved Pad Thai sauce, and 50 g water to the bowl. Insert the butterfly whisk. Cook 5-7 min / 90°C / Reverse / Speed 1, or until noodles are tender but still have a slight bite. Pause halfway through to scrape down the sides of the bowl and check for sticking; add a splash more water if needed.
  9. Add the cooked chicken, shrimp, tofu (if using), bean sprouts, chives/spring onions, and chopped peanuts to the bowl. Gently combine 1 min / 90°C / Reverse / Speed 1.5.
  10. Serve immediately, garnished with extra chopped peanuts, fresh lime wedges, and chilli flakes if desired.
