Arepas with Cheese

Ingredients
- 200 g cheese (e.g., mozzarella, cheddar, or queso fresco)
- 400 g water
- 1 teaspoon salt
- 250 g pre-cooked white cornmeal (e.g., Harina P.A.N.)
- Oil or butter for cooking
Instructions
- If using a block of cheese, cut 200 g cheese into 2-3 cm pieces. Place in the Thermomix bowl. Grate 5 sec / Speed 7. Transfer the grated cheese to a separate bowl and set aside.
- Add 400 g water and 1 teaspoon salt to the Thermomix bowl. Mix 30 sec / 37°C / Speed 1 to dissolve the salt.
- Add 250 g pre-cooked white cornmeal to the bowl. Mix 30 sec / Speed 4 until a dough forms.
- Scrape down the sides of the bowl with the spatula. Knead 1 min / Dough mode to ensure a smooth consistency.
- Transfer the dough to a clean bowl. Cover with a damp cloth and let rest for 5-10 minutes. This allows the cornmeal to fully hydrate and makes the dough easier to work with.
- Divide the dough into 8 equal portions. Flatten each portion into a disc about 1 cm thick. Place a spoonful of the grated cheese in the center of four discs. Top with the remaining four discs and seal the edges, or fold the disc over and seal to create a half-moon shape. Gently flatten and smooth the edges to form round patties about 8-10 cm in diameter and 1.5-2 cm thick.
- Heat a non-stick pan or griddle over medium heat. Lightly grease with oil or butter. Cook the arepas for 5-7 minutes on each side, or until golden brown and cooked through. They should sound hollow when tapped.
- Serve the Arepas immediately, cut open to reveal the melted cheese.
