Apple Oat Muffins

  1. Preheat your oven to 180°C (350°F). Line a 12-hole muffin tray with paper cases or grease well.
  2. Place the peeled, cored, and quartered apples into the simmering basket. Pour 500 g of water into the mixing bowl, insert the simmering basket with apples, and steam for 15-20 minutes / Varoma / Speed 2, or until very soft.
  3. Carefully remove the simmering basket. Discard the water from the mixing bowl. Transfer the steamed apples to the mixing bowl and blend for 10 seconds / Speed 7 until a smooth puree is formed. Set aside (you will need approximately 60 g of puree).
  4. Add 150 g coconut oil to the mixing bowl. Melt for 2 minutes / 60°C / Speed 1.
  5. Add 120 g milk, 55 g egg, 5 g vanilla extract, 2.5 g ground cinnamon, and the prepared apple puree (approx. 60 g) to the mixing bowl. Mix for 10 seconds / Speed 3.
  6. Add 90 g rolled oats and 240 g self-raising flour to the mixing bowl. Mix for 15 seconds / Speed 3, or until just combined. Do not overmix; a few lumps are fine.
  7. Divide the muffin batter evenly among the prepared muffin cases in the tray.
  8. Sprinkle the remaining 15 g rolled oats over the top of each muffin.
  9. Bake for 18-20 minutes, or until golden brown and a skewer inserted into the center comes out clean. Allow to cool slightly in the tray before transferring to a wire rack to cool completely.
