Apple Oat Muffins

Ingredients
- 3 medium apples (approx. 450-500 g), peeled, cored, and quartered
- 150 g coconut oil
- 120 g milk
- 55 g egg
- 5 g vanilla extract
- 2.5 g ground cinnamon
- 90 g rolled oats (plus 15 g for topping)
- 240 g self-raising flour
Instructions
- Preheat your oven to 180°C (350°F). Line a 12-hole muffin tray with paper cases or grease well.
- Place the peeled, cored, and quartered apples into the simmering basket. Pour 500 g of water into the mixing bowl, insert the simmering basket with apples, and steam for 15-20 minutes / Varoma / Speed 2, or until very soft.
- Carefully remove the simmering basket. Discard the water from the mixing bowl. Transfer the steamed apples to the mixing bowl and blend for 10 seconds / Speed 7 until a smooth puree is formed. Set aside (you will need approximately 60 g of puree).
- Add 150 g coconut oil to the mixing bowl. Melt for 2 minutes / 60°C / Speed 1.
- Add 120 g milk, 55 g egg, 5 g vanilla extract, 2.5 g ground cinnamon, and the prepared apple puree (approx. 60 g) to the mixing bowl. Mix for 10 seconds / Speed 3.
- Add 90 g rolled oats and 240 g self-raising flour to the mixing bowl. Mix for 15 seconds / Speed 3, or until just combined. Do not overmix; a few lumps are fine.
- Divide the muffin batter evenly among the prepared muffin cases in the tray.
- Sprinkle the remaining 15 g rolled oats over the top of each muffin.
- Bake for 18-20 minutes, or until golden brown and a skewer inserted into the center comes out clean. Allow to cool slightly in the tray before transferring to a wire rack to cool completely.
