Almeirim Rustic Bread Rolls

Ingredients
- 100 g strong white bread flour (for pre-ferment)
- 100 g lukewarm water (for pre-ferment)
- 1 g fresh yeast (or 0.5 g dried active yeast, for pre-ferment)
- 150 g lukewarm water (for main dough)
- 6 g fresh yeast (or 2 g dried active yeast, for main dough)
- 400 g strong white bread flour (for main dough)
- 5 g salt
- Extra flour for dusting (as needed)
Instructions
- Day 1: Preparing the Pre-ferment
- Add 100 g lukewarm water and 1 g fresh yeast (or 0.5 g dried active yeast) to the Thermomix bowl. Mix 2 min / 37°C / Speed 2.
- Add 100 g strong white bread flour. Mix 10 sec / Speed 4.
- Scrape down the sides of the bowl with the spatula. Knead 1 min / Dough mode.
- Transfer the pre-ferment to a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let it ferment at room temperature overnight (8-12 hours). It should be bubbly and active.
- Day 2: Making the Main Dough
- Add 150 g lukewarm water and 6 g fresh yeast (or 2 g dried active yeast) to the clean Thermomix bowl. Mix 2 min / 37°C / Speed 2.
- Add the prepared pre-ferment from Day 1, 400 g strong white bread flour, and 5 g salt to the Thermomix bowl.
- Knead 5 min / Dough mode.
- Transfer the dough to a lightly oiled bowl. Cover with plastic wrap or a damp cloth and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Preheat your oven to 230°C (450°F). If desired, place an oven-safe tray with about 250 ml of water on the bottom rack for steam to create a crispier crust.
- Gently punch down the risen dough on a lightly floured surface. Divide it into 6 equal portions (approximately 125-130 g each).
- Shape each portion into a round or oval roll. Place the shaped rolls on a baking tray lined with baking paper, leaving space between them.
- Cover the rolls loosely with a damp cloth and let them proof for a final 30-45 minutes, or until visibly puffy.
- Just before baking, use a sharp knife or lame to make a cross incision on top of each roll.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
- Transfer the baked rolls to a wire rack to cool completely before serving.
