Actual Dim Sims

Ingredients
- 5 g star anise
- 3 g Sichuan peppercorns
- 2 g cassia bark (or cinnamon stick)
- 2 g whole white peppercorns
- 2 g fennel seeds
- 1 g whole cloves
- 2 g green cardamom pods
- 1 g whole nutmeg
- 3 g dried orange peel
- 2 g galangal powder
- 3 g coriander seeds
- 150 g turkey liver, cleaned and trimmed
- 150 g beef heart, cleaned and trimmed
- 150 g pork kidney, cleaned and trimmed
- 100 g brown onion, quartered
- 30 ml light soy sauce
- 20 ml Shaoxing wine
- 10 ml sesame oil
- 15 g cornstarch
- 5 g caster sugar
- 3 g salt
- 30-40 wonton wrappers (square or round)
- 1000 g water (for steaming)
Instructions
- Add star anise, Sichuan peppercorns, cassia bark, white peppercorns, fennel seeds, cloves, cardamom pods, nutmeg, dried orange peel, galangal powder, and coriander seeds to a clean, dry Thermomix bowl. Grind 20 sec / Speed 10. Transfer to a small bowl and set aside.
- Cut the cleaned turkey liver, beef heart, and pork kidney into 2-3 cm pieces. Add to the Thermomix bowl. Pulse 3-4 times on Turbo for 0.5 sec bursts, or chop 5 sec / Speed 7 until finely minced but not puréed. Transfer to a large mixing bowl.
- Add the quartered brown onion to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides.
- Add the chopped offal, ground spice mixture, light soy sauce, Shaoxing wine, sesame oil, cornstarch, caster sugar, and salt to the bowl with the onion. Mix 20 sec / Speed 3 / Reverse to combine thoroughly. Scrape down the sides and mix again if needed.
- To assemble the dim sims, place about 1 tablespoon of filling in the centre of each wonton wrapper. Moisten the edges with a little water. Fold the wrapper over the filling to create a half-moon shape, pressing firmly to seal. You can also gather the edges to form a pleated parcel, leaving the top slightly open.
- Clean the Thermomix bowl. Add 1000 g water to the bowl. Secure the Varoma into position.
- Line the Varoma tray and insert with baking paper, ensuring some holes are left uncovered for steam circulation. Arrange the dim sims in a single layer in the Varoma and on the Varoma tray, making sure they do not touch each other.
- Steam the dim sims 20-25 min / Varoma / Speed 2. If steaming in batches, ensure there is enough water in the bowl and add 5-10 minutes to the steaming time for subsequent batches.
- Carefully remove the Varoma. Serve the hot dim sims immediately with your favourite dipping sauce, such as chilli oil, soy sauce, or a ginger-vinegar dip.
